Fun school lunch box ideas for busy parents!

Fed up of thinking of ideas to get the kids to eat their school lunch? Soggy sandwhiches don't always cut it with fussy kids!

We've put together some ideas for fun school lunch box ideas to keep things exciting but also quick and easy for busy mums!

Egg Muffins

Ingredients :

1 tsp olive oil (or oil of your choice)

50g cheddar cheese

3 large eggs

Chopped vegetables of your choice : onions, peppers, carrots, sweetcorn work really well!

Method :

* Preheat the oven to 180°C/350°F/Gas Mark 4.

* Line a muffin tin with six silicone or paper cupcake cases.

* Heat oil in a frying pan, add vegetables and lightly fry

* Break the eggs into a large bowl and whisk until frothy. Add all of the vegetables and the grated cheese to the eggs. Stir until combined.

* Spoon the mixture into the cupcake cases. Bake in the preheated oven for 25 minutes until cooked through and golden

Cheese Rolls

Okay so essentially, it's a rolled up sandwich...but bare with us!

Ingredients :

1 tsp olive oil (or oil of your choice)

50g cheddar cheese (sliced)

2 slices of bread

1/2 a small onion (finely chopped)

Method :

* Lay out bread and add slice of cheese, and some chopped onions

* Roll up the bread to make a 'swiss roll'

* Heat oil in frying pan and add 'swiss roll' leaving till it goes brown and flip - this will melt the cheese and keep the roll in place ready to go into the lunch box!

Super healthy wrap

Ingredients :

1 wrap

Cream cheese

Carrots - grated

Cooked chicken - shredded

Grated cheese

Lettuce - shredded

Method :

* Lay out wrap

* Spread thin layer of cream cheese

* Add shreaded chicken, carrots and cheese

* Fold bottom of the wrap up and then bring the two sides together

Child friendly kebabs!

Ingredients :

Kebab sticks (you can get safer plastic ones from places like poundland or amazon!)

Cocktail sausages

Cucumber

Tomatoes

Cheese

Boiled egg

Method :

* Cut up all ingredients into slices/cubes easy enough to push onto kebab stick

* In alternative ingredients, slide each item on to make a fun school snack!

Mac and cheese bites!

Ingredients :

  • ½ pound macaroni

  • 2 Tablespoons butter

  • 2 Tablespoons flour

  • 1½ cups milk

  • 2 cups grated cheddar cheese

  • 2 ounces cream cheese

  • 1 egg beaten

Method :

*Preheat oven to 400 degrees F

* Cook pasta according to packaged directions and set aside.

*In a medium size pan combine butter and flour over medium heat. Whisk until butter is melted and mixture is smooth. Slowly add milk and bring to a simmer. Add 1½ cups of the cheese, cream cheese, salt and pepper. Stir until smooth and creamy. Remove from heat.

*In a large mixing bowl, carefully stir pasta, cheese sauce, and egg until evenly mixed and pasta is evenly coated.

*Spoon mac and cheese into mini muffin tins and top each with a small pinch of remaining cheese. Bake at 400 degrees F for 15 minutes or until golden brown.

*Allow to cool 5 minutes before gently removing the bites.
